Homemade Cracker Jack

  • 10 c. popped popcorn (air-popped or stove-popped, not microwave)
  • 1 -2 c. cocktail peanuts
  • 1 c. butter
  • 1 1/2 c. brown sugar
  • 2 t. vanilla

1. Combine popcorn and peanuts in a large bowl.

2. In a small sauce pan, melt butter and brown sugar together. Bring to a slow boil and boil for 2 minutes, stirring constantly. Remove from heat and stir in vanilla.

3. Pour caramel sauce over popcorn and peanuts and toss to coat. Pour onto a cookie sheet or two and bake at 250 for 15-20 minutes, until dry.

Yummy Chex and Stuff

10 C Crispex or Honey Chex
10 C Golden Grahams
2 C coconut
1 C slivered almonds

1 bag milk chocolate chips

Combine these ingredients in a large tub and set aside.

1 stick butter
1 C corn syrup
1 C sugar

1 C brown sugar

Slow boil for 3 minutes.  Pour over mixture above and stir well.

(The chocolate melts on the other ingredients, so don\’t be surprised when this happens)

Pumpkin Apple Muffins with Streusel Topping

Ingredients:

2 1/2 cups all-purpose flour
2 cups sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs, lightly beaten

1 cup canned pumpkin

1/2 cup vegetable oil
2 cups finely chopped peeled apples

Topping:
1/4 cup sugar

2 tablespoons all-purpose flour

1/2 teaspoon ground cinnamon
1 tablespoon butter

Directions:
In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt. Combine eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups three-fourths full. For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle 1 teaspoon over each muffin. Bake at 350 degrees F for 30-35 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

(The blog I found this on said that they freeze really well, and that she will pull them out of the freezer the night before and they will be thawed by morning)

Sweet Potato Streusel Muffins

Ingredients:
2 cups whole wheat flour
2 t. baking powder
1 t. nutmeg
1/2 t. sea salt
1/2 cup honey
1/4 cup raisins (optional)
1 egg
1 cup mashed sweet potato*
1/2 cup milk
3 T. melted butter

Topping:
3 T. brown sugar
1 T. butter, softened
2 T. chopped nuts (optional)

Directions:
Combine flour, baking powder, salt and nutmeg in a bowl.  Add honey, raisins, eggs, sweet potato, milk and butter.  Stir until just mixed.  Scoop into 15 paper lined muffin cups.

In a small bowl, combine topping ingredients.  Sprinkle evenly over each muffin.  Bake at 400 degrees for 15-20 minutes.

*To make mashed sweet potatoes:
Scrub two medium sweet potatoes.  Stab them each with a knife, then place them in a glass baking dish.  Cover and bake for 1 hour or until the potato is very tender.  Allow potatoes to cool a few minutes, then carefully peel them.  Mash the potatoes with a fork or potato masher.

You’ve gotta love a recipe that makes your house smell like everything your house is supposed to smell like in the fall!  And, a recipe that helps you get sweet potatoes into your kids.  And, a recipe that makes something simple that tastes so good!!

Crock-Pot Applesauce

This makes enough for 4 people. If you would like to freeze or can, use more apples.

Ingredients:
4 large apples, skinned ,cored, and cut in quarters
Juice from 1 lemon

1/2 tsp cinnamon

1 tsp vanilla

1 T brown sugar

1/4 cup H20

The Directions:

Skin, core, and cut your apples into quarters. Plop the pieces into your crockpot. Add the juice from the lemon, and the water. Pour in the vanilla (imitation works fine), and add the cinnamon and brown sugar.

Cover and cook on low for 4-6 hours. When the apples are super tender, mash with a potato masher or large fork.
